A basement bar in downtown Asheville that rewrites its whole cocktail list each season.
An unmarked door on Biltmore Ave, half a block off Pack Square, opens onto its own stairwell and nothing else. Down in the basement, Färmesē sits under velvet and low light, along a live-edge bar with the spirits backlit behind it. Layla and Justin Neuroth ran a whiskey bar in Santa Rosa, California, for five years. Idaho came next. They opened this one on January 17, 2025. The name draws on Greek and Latin roots for pharmacy — magic, cure, potion, medicine.
The list turns with the harvest rather than the calendar. Herbs come from growers in Leicester, Fairview and the Sandy Mush valley; the roots get macerated in house and the dairy cultured there too. The Signature section names its drinks for what was done to them — Foamy, Smoked, Carbonated, Barrel Aged, Milk-Punched. Barrel Aged starts from a Mexican mushroom rum infused for twenty-four hours and finishes on an absinthe rinse and smoked rosemary. Carbonated runs mezcal, Campari and sweet vermouth over hot charcoal before it gets its bubbles.
Underneath all of it sits a spine that does not move. Call Classics runs eight deep — Old Fashioned, Manhattan, Negroni, Boulevardier, Gin Fizz — and a whole section does nothing but mules, six of them, each built on ginger puree and Angostura. Staff Picks come from the bar team: Willie’s Chiles sets tequila and pomegranate against Thai red chiles and cinnamon, and Rampant Affair is vodka, pickled ramp and dry vermouth. The mocktails get a section of their own.
The bar teaches, too: a two-hour, hands-on cocktail class, recipes to take home. BRÜ, the Neuroths’ sister business, sits nearby. A handful of nights a year the two kitchens meet for a six-course dinner alongside wine, beer and these same cocktails. Weekends belong to a recurring guest DJ who goes by discogeek, working down-tempo house and balearic sets from a wooden booth against the brick.
The room seats forty, or ninety-nine if somebody takes the whole basement. The list will look different by winter. The room won’t.
