A basement list sorted by what was done to the drink, not what went in.

Layla and Justin Neuroth ran a whiskey bar in Santa Rosa, California, for five years, then landed in Asheville by way of Idaho in August 2024. They opened Färmesē in a basement at 5 Biltmore Ave, Suite C, on January 17, 2025. Exposed brick runs the walls below street level, the room lit low; a booth holds the DJs who work Friday and Saturday nights. The name comes from Greek and Latin pharmacy terms — magic, cure, potion, medicine. The 31-cocktail list splits into sections built around one technique each — Barrel Aged, Carbonated, Foamy, Smoked, Infused Clarified — and a Staff Picks & THC Infused list runs alongside the straight classics. Fidget About It (tequila, Bauchant, lime, fig syrup, cinnamon bitters), Keys to the Kingdom (white rum, lime, mint, coconut cream) and She’s a Ginger (mezcal, lemon, ginger beer, maple syrup) sit next to a Negroni and a Manhattan, all built on the same milk washes, fat washes, house shrubs and syrups. A clarified bourbon Whiskey Sour was an early bestseller, and a smoked rum cocktail built on a house shrub followed it. At the top of the list sits a $150 Cocktail For Two: barrel-aged Clase Azul tequila, truffle honey, duck-fat-washed Bauchant, reduced-acid lime. The Neuroths also run BRÜ, a sister restaurant they pair with Färmesē for occasional six-course dinners split across wine, beer and cocktails. Ask a bartender which section to start in — the list is organised by what was done to the drink, not by what went into it.
