A beer town that learned to stir. These are the fourteen rooms where it shows.

Asheville has more good bars than a city this size has any business having, and the reason is not mystery. Rent was cheap here for a long stretch, the brewery boom trained a service class that stayed, and the buildings downtown were built well enough in the twenties to still be worth occupying. What came out of that is a scene with unusual range: a room that reconstructs an 1870s Old Fashioned four blocks from one that sorts its menu by centrifuge technique, and both of them full on a Tuesday.
Fourteen rooms are on this page. That number is a cut, not a census — there are fifty-three cocktail bars in this city we consider worth publishing at all, and the other thirty-nine are on the chapter page with the map. What is here is the shortlist.

Nine sections of menu for fifty-four seats. Chall Gray uses the space to argue a point: the same drink as 1870 built it and as 1930 did, set down together so you can taste the sixty years between.

Ask what separates a good Asheville room from the one everything else gets measured against, and the answer is that structure. Nothing else on this page asks you to taste a comparison. Two builds arrive sized for two people, a Manhattan Service and a Japanese Highball, which is a bar treating a shared drink as a format rather than an accident.
The names carry their own weight — Tattletale, Creature Negroni, Midnight Bouquet on anejo and mezcal under grapefruit bitters. Gray took the name from Harry Johnson, who published a manual in 1882 insisting a drink should reach the guest quickly, and a hundred and forty years on the room still turns fast without feeling rushed.
Trivia empties it on Sundays and board games fill it again on Wednesdays, which tells you the regulars are not here for the ceremony either. Go first. Every room after this one reads differently once you have.

The shelves are the tell. Books here are not set dressing: Bagatelle Books next door stocks them, and if one holds your attention through a drink it goes on the tab with the drink.

No other room in this city has worked out a way to sell you something you cannot drink without it feeling like a gift shop. The list runs twenty deep and splits itself honestly — six drinks sit apart at sixteen to twenty dollars, the rest at ten to fourteen, so the room tells you which pours it is betting on before you order.
Studs Lonigan is described on its card as an evil twin of a White Negroni. Le Guin and Tonic runs gin and elderflower under grapefruit essence. What the printed menu never says is that a Manhattan drops to nine dollars on Mondays and a Negroni does the same on Wednesdays, a rotation the regulars carry in their heads.
Chall Gray, Jay Sanders and Lucia Gray built this seven years after Little Jumbo and deliberately did not rebuild it: reading carrels down one side, curved booths facing them, a parlor that takes a reservation. Come when you want the corner rather than the room.

Tiki Easy Bar

Every list like this one carries a themed room that turns out to be a costume. This is not that. The proof is the rum: a 1963 British Royal Navy bottling, aged under government bond, pours by the ounce at two hundred dollars, and a few stools away a frozen pina colada costs twelve.

A bar running only the first is a museum and a bar running only the second is a beach chair; holding both at once takes actual conviction. Chris Frosaker fell for the genre during the pandemic and by 2023 had turned twenty-five hundred square feet of former metal shop behind Hi-Wire into more than fifty tropical drinks, most of them between nine and seventeen dollars, with a Manta Ray and a Jungle Bird on Acid among the ones people come back for.
The Test Pilot follows what Donn Beach wrote down in 1941 rather than a modern shortcut. Jason Rojas and Allison Cochran throw the mugs by hand. Ten people at a time meet as the Rum Club to work through clairin and rhum agricole. Bring people. This is the one room on the page that is worse alone.

The Times Bar

Two bars share this address and only one of them serves alcohol. That is the argument. Coffee runs the counter through daylight, and after dark the same room turns twenty-one-and-up, no reservations, whoever walks in gets the seat.

Most places that try this eventually pick a side; here the seam holds, and the drinks list is built across it rather than around it. A Carajillo puts Licor 43 against espresso and orange. An Espresso Martini finishes on Amarula at fifteen dollars. Then the room turns and the same hands are stacking bourbon, zucca rabarbaro, amontillado sherry and smoke into a Half Nelson at sixteen.
Four headings organise the rest — nineties drinks, caffeinated ones, features, throwbacks — from eleven to sixteen dollars, and the throwbacks are where it gets strange: Zubrowka steeped with Earl Grey and ginger, or an oat-milk clarified build carrying absinthe, Ardbeg and Planteray OFTD. Douglas Ellington finished this building in 1928 and the National Register took it in 1976, which is a long time for a room to wait for a bar that treats daylight seriously.

Most rooms treat live music as a thing that happens on some nights. Here it is closer to the operating condition — three genres across one August week, every bill starting at half past eight.

No other room on this page could fill that calendar without running out of city. The bar keeps pace in its own register: one original sits in a spent bourbon cask for a third of a year before anybody drinks it, and a Manhattan here can arrive built on Hibiki Harmony instead of rye.
The names on that shelf run to Sazerac Forte and Fire Walk with Me. Those two things are the same instinct pointed in opposite directions — a calendar that never rests and a cask nobody hurries — and holding both is rarer than either.
Casey Campfield had already run a bar called Joli Rouge from 2005 to 2008 before this one. Check who is playing before you go, then go anyway.

Imperial

Agave is the whole case. When Table vacated the upstairs room in 2020, Imperial did not simply inherit a bar — it pointed the list at mezcal and tequila and left it there, which is a narrower bet than anything else on this page makes.

The range it buys is real. A Pechuga Old-Fashioned runs twenty-six dollars and arrives sealed under candelilla wax, espadin underneath it with corn cob and burnt orange oil; the house gin and tonic costs ten and still arrives carrying calamus, lemongrass, linden, angelica, galangal, orris, beet root and cassia.
Two drinks, sixteen dollars apart, both showing their work. Classics hold the other half of the list — Jungle Bird, Martinez, Rosita — so the room never becomes a lecture. Three operations stack at 48 College Street: a taproom below, this bar above it, and a kitchen sending out trout from Sunburst and meat from Hickory Nut Gap.
Rotating DJs take the upstairs room, and Service Industry Sunday feeds anyone who spent the week on their feet. Know which floor you want before you climb.

Top of the Monk

Three bars share this building and only the top one is about cocktails. That separation is the point: Belgian beer holds the street level and the basement, so nothing upstairs has to be everything.

Thirty seats, a patio angled at the South Slope sunset, and a list of nine that runs thirteen to seventeen dollars — small enough that every drink on it had to earn the slot. Kala Brooks built that list over years here before taking over all three bars as general manager, and she developed the group’s Holy Water seltzer besides.
The Sexy Old Fashioned stacks Woodford Double Oaked against High West Double Rye with a house allspice dram and barrel-aged cherry bitters. The Miso Honey Goldrush ferments clover honey with miso and pours it over Toki; at thirteen dollars it is the cheapest thing on the list rather than the simplest, which is unusual anywhere.
One drink, the Lemon Tarragon Flip, finishes with the Abbey Blonde poured downstairs — the single place the beer gets upstairs at all. The floor underfoot is the original, roughly 120 years old, refinished across a fifteen-month closure. Take the stairs.

Hotel bars usually cost you something — either the drinks are careful or the room is. This one gives up neither, and it is the only place on this page where the dessert cocktails are the serious end of the list rather than an afterthought stapled on.

They get their own heading: Mamacita, a Sorbet and Sparkling, and a Banana Bread at Work whose base is bourbon washed in brown butter and which carries a dairy warning most drinks never need. Elsewhere the technique shows without announcing itself — a clarified rye finished under a red wine float, a Mai-Tai rebuilt on miso caramel and orgeat, an IPA floated over tequila, mezcal and lime.
Prices sit at sixteen to twenty, the top of this list, and the room answers for it: the ground floor of the Kimpton Arras off Pack Square, soft seating around the bar, a patio out the back, Bargello holding the far end of the building. On Thursdays twenty dollars buys a dirty martini, a Caesar and fries, which is the least hotel thing about it.

Workshop Lounge

The building made the steel that went into the Biltmore Estate. That is not a decorative fact here; it is the reason the room looks the way it does, and it is why this one earns a place over the several other handsome hotel bars in town.

One wall is left as raw foundry brick. Everything else is deliberate against it — teal leather on brass legs, a marble top, mirrored cabinets, a row of brass pendants. Sit at the bar and you get the polish; sit by the brick and you get what the building used to do.
The list is short and unembarrassed about it, thirteen to seventeen dollars, carried by three drinks: an Old Fashioned smoked in the glass on Old Forester and demerara, a Boulevardier that swaps Kamora coffee liqueur in beside Amaro Averna, and a gimlet run through guava, chili and Tajin.
The courtyard out back — iron furniture, lanterns, brick on all sides — is the better seat on a warm night, and the room has been putting live music in front of it. Ask for the courtyard first.

The Golden Pineapple

This is the cheapest good list in the city and it does not behave like one. House drinks start at six dollars and stop at fourteen, which on this page is roughly what a single pour costs elsewhere.

Katey Ryder and Donnie Pratt tended other people’s bars in this town for years before building this one, and it shows in what they refused to skimp on. The zero-proof drinks are not a footnote — they carry their own heading, NO BOOZE., and their own builds, including a gin-and-tonic shape on lavender and butterfly pea.
Two items on the list have no ingredients printed at all, which is either a joke or a dare. Wake Up Call is the opposite, and prints all four: blanco tequila, absinthe, jalapeño, watermelon. Every October the whole room becomes a haunted pop-up with a separate menu. Order the one named after the bar — bourbon, overproof rum, amaro, tepache — then ask what the shooter actually is.

Twelve years is the argument. Most rooms that open around a strong idea drift off it; this one has not, and the proof is in what has not changed.

Parker Reid built the original storefront on North Market in 2014 around a single conceit — a bar that behaves like a greenhouse — and the zinc counters and the Iron Maiden ironwork are still the ones he put in. Wear, not replacement. The kitchen has the same stubbornness.
When the James Beard House gave Charlie Hodge and Graham House a night in Greenwich Village in 2018, they drove the ingredients up themselves rather than hand squash blossoms and Chicken of the Woods to a freight company, and cooked for seventy-five people at a hundred and seventy-five dollars each. That instinct lands in the glass: dandelion and burdock root in an aged-rum daiquiri, a dirty martini built on blue cheese vodka the bar makes and olives it brines, tequila set against al pastor-brined tomato.
Thirteen to seventeen dollars. Wine Wednesdays put three pours on the mezzanine for ten. Sit upstairs if it is free.

Antidote at Chemist Spirits

The still is not decoration and it is not downstairs — the bar is arranged around it. Debbie Word walked away from landscape architecture in 2016 to teach herself distilling on a family still, her daughter Danielle bringing a chemistry degree to it, and two years later the room opened around the equipment rather than beside it.

That changes what the list can be. Forty-three cocktails run mostly on spirits made in the building, so the house gin, vodka and whiskey turn up in different registers all evening instead of once: navy-strength gin driven through a celery shrub the bar makes; vodka carrying honeysuckle, orris root and a vegan foam; whiskey with blueberry and basil.
Outside names appear only where they earn it, Eda Rhyne’s Appalachian Fernet in a daiquiri among them. Four absinthes pour neat. Espresso runs all day and Dobra Tea’s loose-leaf list runs beside it, which makes this the only address on the page that is honestly two businesses sharing one set of stools.
Three floors, and the roof is worth the climb when the weather allows it.

A restaurant on a cocktail list needs to justify itself, and this one does it with a bar menu sorted the way a Spanish bar sorts one rather than the way an American bar does.

Four headings, not one: low-proof pours, standards, coffee drinks, and whatever the season is doing, none of it over seventeen dollars. Sherry turns up in three of the fourteen, which is three more than anywhere else here manages — a Sherry Tonic, a Rebujito, and a cold-brew-and-rum build that finishes under a PX float.
Katie Button and Felix Meana came up through elBulli and Cafe Atlantico and opened this inside a nineteen-twenties bus depot in 2011; the James Beard Foundation named it Outstanding Hospitality in 2022, which is an award for how a room treats people rather than what it pours, and it is the reason a table here is easy even when the city is not.
Nikaela French built a martini for the end of summer on clarified tomato, manzanilla and a tomato shrub under an olive oil float. Ask what is on the Temporada list; it is the half that changes.

Clarified and infused. Reading the headings tells you more about the bar than any single drink would. Thirty-one cocktails sorted by technique is a claim that the method is the point, and the room backs it. Washes in milk and in fat, shrubs and syrups made on site, all of it running under the classics too, so a Negroni here has been through the same workshop as everything else.
Layla and Justin Neuroth kept a whiskey bar in Santa Rosa for five years, took a detour through Idaho, and opened this below street level on 5 Biltmore Avenue in January 2025 — the newest room on this page by several years. A clarified whiskey sour sold first and hardest. At the top of the list a hundred and fifty dollars buys a drink built for two on barrel-aged Clase Azul, truffle honey and duck-fat-washed Bauchant.
The name comes out of Greek and Latin pharmacy words. Ask which section to start in, not which drink.

Every room on Mudl carries a score. It weighs the cocktail program most heavily, then standing, then the room itself, then how central drinks are to what the place is, and it is judged against the whole country rather than graded on a curve inside one city. That score decides which rooms are on this page and roughly where they sit.
