Whole legs of jamón hang under a sign that reads Jamonería; the wall beside it spells out Jerez, Vermut, Sidra. A three-panel mural over the corner tables layers flamenco dancers, a spired cathedral and a street trumpeter onto pages of old text. The room did its first job as a bus depot in the 1920s; Katie Button and Felix Meana opened Cúrate inside it in 2011. Between them they came up through Ferran Adrià’s elBulli and José Andrés’s Café Atlántico. The James Beard Foundation named the restaurant Outstanding Hospitality in 2022, recognition for how the room runs rather than what’s in the glass. The bar sorts its own list into four sections instead of the usual one: Bajo en Alcohol for the low-proof pours, Clásicos for the standards, Cocteles con Café for the coffee drinks, Temporada for whatever’s in season, eight to seventeen dollars a glass. Sherry runs through three of the fourteen — the Sherry Tonic, the Rebujito, and the Gota Fria’s float of PX over cold brew and rum. The newest addition is a martini called La Tomatina, built by bartender Nikaela French for the last weeks of summer: Asheville-distilled vodka, Hendrick’s gin, manzanilla sherry, clarified tomato juice and a tomato shrub, finished with an olive oil float and a skewer of sherry-pickled onion and tomato. Order it now; it comes off the list when summer does.
